anyhow, i don't think I Will Always Love You is a bad choice -- it'll be a challenge to get all the Whitney out
also, 9 to 5 is one of my all time favorite songs to karaoke (which, i admit, doesn't have much to do with what's good to sing)
but, some actuall suggestions:

The Grass is Blue (blue-grassy -- surprise)
Silver & Gold
To Know Him is to Love Him (pure cheese from Trio, the Dolly/Emmylou/Linda Ronstadt album -- one of my favorite things as a child, i still get this song in my head all the time)
