For those interested in this sort of thing:
I have adapted this recipe from (I think) Orangette, a food blogger, who adapted it from Nigella Lawson. The recipe is easy and very very good. Really, you can add what you'd like - any sort of nuts or shredded coconut (Adam would kill me if I added coconut!). If you add dried fruits - I like to add dried cranberries or raisins - make sure you do so after baking! I eat this all up with plain, tart yoghurt or soy milk.
Dry ingredients=
5 cups rolled oats
Nuts, as much as and if you desire
Seeds, if you desire (the "traditional" recipe calls for 1 cup sunflower seeds, which I don't like, and 3/4 cup sesame seeds, which I do. I also add flax seeds.)
3/4 cup brown sugar
2 tsp ground cinnamon
1 tsp ground ginger (which I don't have and haven't tried. I add some nutmeg instead.)
1 tsp salt
Wet ingredients=
3/4 cup unsweetened apple sauce
1/3 cup brown rice syrup (amazing wonderful stuff)
1/4 cup honey
2 Tbsp veg oil
Preheat oven to 300F. Combine the dry ingredients in a large bowl and mix. In a small bowl mix together the wet ingredients. Then combine the small bowl into the large bowl, stir well.
Spread the stuff over two baking sheets. Bake about 35-40 minutes, stirring the granola every ten minutes, so it bakes evenly. When it's done, remove from oven, stir, let cool. Once it's cooled, add dried fruits or berries if you wish, store in an airtight container.
I find this recipe to be far more delicious, healthy and economical than most store bought granolas.
